High-fat and High-sugar Snacks Contribute to Fatty Liver and Abdominal Obesity

Results show that high calorie diets increased BMI. Eating more frequent meals significantly increased IHTG, while larger sized meals did not. Researchers found that belly fat increased in the high fat/high sugar frequency group and in the high sugar-frequency group. A decrease in liver insulin sensitivity was found in the high fat/high sugar-frequency group.

Researchers from The Netherlands found that snacking on high-fat and high-sugar foods was independently associated with abdominal fat and fatty liver (hepatic steatosis). According to the study published in Hepatology, a journal of the American Association for the Study of Liver Diseases, hypercaloric diet with frequent meals increases intrahepatic triglyceride content (IHTG) and fat around the waist, but increasing meal size did not.

Obesity is a global health concern with the World Health Organization reporting that more than 200 million men and close to 300 million women were obese in 2008. In the U.S. the Centers for Disease Control and Prevention (CDC) report that 36% of adult Americans and 17% of children in the country are obese. Studies link obesity to the accumulation of abdominal fat and fat in the liver, making non-alcoholic fatty liver disease (NAFLD) one of the most prevalent diseases of the liver.

How to Make Healthy Choices at Burger Chains

I am not much of a fast food eater any more, but I know you folks still in the work force sometimes don’t have the option of going to the fridge and fixing a nutritious meal or snack for yourself as I do.

So here are some suggestions to help you satisfy your hunger without sacrificing your good health from Helpguide.org.

Count Sodium as well as Calories at Fast Food Outlets

Being aware of calorie consumption is a very useful tool in getting control of your weight. However, a recent study by the New York City Health Department made some interesting findings regarding sodium, according to MedPage Today.

High salt/sodium intake is a major contributor to cardiovascular disease. The American Heart Association recommends that adults stay under 1500 mg of sodium per day, and never take in more than 2,300 mg a day.

The MedPage fast food study showed:

▪    About 57% of the meals exceeded the 1,500-mg daily sodium level.

▪    Fried chicken outlets including KFC and Popeye’s were the worst offenders, with 83% of meals exceeding 1500 mg of sodium and 55% of the meals surpassing 2,300 mg of sodium.

▪    At only one of the 11 chains included in the study, Au Bon Pain, did more than 7% of meals contain less than 600 mg, the FDA’s “healthy” sodium level for meals. But even there, 46% of meals had 1,500 mg or more of sodium.

▪    Even those eating lower calorie meals were likely to exceed their daily sodium limit within a single meal.

Because of the higher sodium content in fast food fare, it would seem logical to try and refrain from adding salt to your meal.

How Many Calories in McDonald’s Chicken Clubhouse Sandwich?

LeBron James is the newest member of the exclusive club that also includes Johnny Football. We see him entering the exclusive gathering. Lucky LeBron – he gets to  have McDonald’s newest creation – the Chicken Club Houe Sandwich. So goes the TV commercial.

Maybe not so lucky LeBron.

There are 670 calories in the sammy. That comes to around a third of a normal person’s calorie needs in a single day. But wait. Does anyone go to Mickey D’s and just have a sammy? Probably not. There are drinks and shakes galore that kick up the calorie count. Not to mention fries.

So if you just go for the sandwich, you are a third of the way there on your food for the day, but if you add a soft drink or fries, you will up the ante by several hundred calories and either have to eat less later or go over your calorie budget for the day.

Here is further nutrition info: 36 grams of protein. Not bad. The average adult needs around 55 grams per day, so the Chicken Club does a good job in satisfying your protein quota.

There are 33 grams of fat. That’s kind of high.

Cholesterol, 85 mg, not bad at all.

Fiber, 3 grams. This is a small amount. The average adult needs around 35 to 40 grams to maintain good health.

Carbs, 58 grams, okay.

Sodium, at 1410 mg, is problematic. As I wrote in reviewing the new quarter pounders, “The guidelines issued by the government say that adults should reduce daily sodium intake to less than 2300 mg per day. For those over age 51, or with a medical condition like diabetes or hypertension, salt intake should fall below 1500 mg. The American Heart Association puts the limit at 1500 mg per day for the entire population.”

Too much sodium puts you at risk for high blood pressure and kidney disease.

So, the new Chicken Club House Sandwich is a high calorie concoction with a lot of protein, but too much sodium. Calorie count could also put  you over your daily budget.

Sugar Overpowers Fat in Cravings Test

As a person who has battled his belt line over the years, I have overindulged in sweet treats like ice cream as well as fat treats like pizza. I know that each felt compelling at the time, but it turns out that sugar has more powerful impact on the brain’s pleasure centers than fat, according to a recent study published in the US National Library of Medicine.

The New York Times picked it up and explained that it is the sugar and not the fat that primarily triggers the brain’s receptors.

“The new research tracked brain activity in more than 100 high school students as they drank chocolate-flavored milkshakes that were identical in calories but either high in sugar and low in fat, or vice versa. While both kinds of shakes lit up pleasure centers in the brain, those that were high in sugar did so far more effectively, firing up a food-reward network that plays a role in compulsive eating. Daily Sugar Guidelines Lowered – WHO

Here’s some news that doesn’t need sugar coating. The Geneva-based World Health Organization (WHO) wants people to restrict their sugar intake to no more than five percent of their daily calorie intake from the current recommended 10 percent. Put into familiar usage, five percent of our calories comes to around six teaspoons of sugar a day, or 24 grams. That’s less than the amount of sugar in a can of soda.

These guidelines are not directed at the sugar intrinsic in whole foods like fruits and vegetables.

They are directed at glucose and fructose, like table sugar, honey, syrup and fruit juices.

The American Heart Association recommends 25 grams of sugar a day for women and 38 grams for men. I posted What does the American Heart Association say about Sugar for a good rundown on calories from sugar.

Just a reminder McDonald’s Frozen Strawberry Lemonade has 67 grams of sugar in the 16 ounce size. That is 15+ teaspoons full.

This recommendation from the WHO is not a welcome one in some quarters. In 2004 when the WHO tried to include the ten percent sugar limit recommendation in its Global Strategy for Diet, Physical Activity and Health, the U.S. Congress — under pressure from the sugar industry lobby — threatened to withdraw U.S. funding for the agency. The direct reference to the ten percent figure was removed from the final report.

I hope you can decide for yourself that you don’t need to consume as much sugar as is offered by fast food and processed food purveyors whether the WHO recommendation is adopted or not.

Mc Donald’s Mc Rib Chemical Additives Rated by CSPI

“Few fast-food items have achieved the cultural prominence of the McRib. Object of satire, conspiracy theory, and fevered online speculation, the McRib typically appears on McDonald’s menus with great fanfare only to vanish, fleetingly, some time later,” according to the Center for Science in the Public Interest (CSPI).

“As Ian Bogost wrote in The Atlantic, we experience the McRib as (quasi-)foodstuff, as marketing campaign, as cult object, as Internet meme, but those experiences don’t sufficiently explain it.

“To better explain the McRib, the Center for Science in the Public Interest has taken a closer look at a few of its chemical ingredients. There’s more to the McRib, it turns out, than bun, pork, sauce, pickles and onions.

“McRib Pork Patty: BHA, propyl gallate, and citric acid are used as preservatives in the patty. While citric acid is safe, CSPI recommends that consumers avoid BHA (butylated hydroxyanisole) and propyl gallate. The Food and Drug Administration permits the use of BHA in food, even though its parent agency, the Department of Health and Human Services, says that BHA is “reasonably anticipated to be a human carcinogen.” It is often used with propyl gallate to prevent fats and oils from spoiling. CSPI says that propyl gallate may be an endocrine disruptor and needs to be better studied.

“McRib Sauce: After water, the main ingredient in the sauce is high-fructose corn syrup. It’s not true that HFCS is worse than regular sugar, but CSPI recommends everyone cut back on both. Xanthan gum, which is secreted by bacteria, is safe, at least in this application. (Used in a product called SimplyThick, it has caused problems in infants.) Sodium benzoate appears to be safe, though it causes allergic reactions in sensitive individuals. It is unclear exactly which of several caramel color varieties is used in McRib Sauce, but when it is produced with ammonia, carcinogenic contaminants form. That’s been a problem in caramel-colored soft drinks, but regardless of how the caramel coloring in McRib Sauce was produced, the amount one would consume is small and not a problem. Good for McDonald’s for using beet powder to color the sauce instead of Red 3 (a carcinogen) or Red 40 (one of several dyes which in Europe must be labeled as having “an adverse effect on activity and attention in children”). I really enjoy the information available from WebMD. They offer articles, studies and quizzes on healthy subjects.

I want to tell you about this recent one – Test Your Fast Food Smarts.

I have been writing this blog for the best part of four years. As a result of this project, I have taken off 15 pounds from what I had thought was my ideal weight 165 pounds. In addition I have a resting heart rate below 50 beats per minute and my body fat remains under 17 per cent. Before I took the quiz I thought I had a really good fix on fast food even though I don’t eat very much of it. However, of the 16 questions in the quiz I got less than half of them right.

Here are a couple of examples of questions in the quiz. I hope they will whet your appetite for more info on the subject.

How many Americans eat fast food every day?

How many of us guzzle sugary drinks daily?

To burn off an order of medium fries, a 155 pound adult needs to? Ride a stationary bike hard for 30 minutes or do high impact aerobics for 30 minutes or strength train for 60 minutes?

On average a teen will grab a fast food meal that has how many calories? 500 to 800; 800 to 1100; 1100 to 1500 calories?

No, I am not going to spoil your fun by giving you any of the answers. I hope you will take the test and derive the full benefit from it. At the risk of using a cliche – You’ll thank me for it.

How Many Calories in McDonald’s Mighty Wings?

Mickey D’s has announced it will roll out its newest creation – “Mighty Wings” – next month. The Wings have been tested in three big markets since the beginning of the year. My town, Chicago was one of them.

The wings will come in three, five and 10 piece orders and there will be nine different sauces available. Prices start at $2.99.

Their national debut is scheduled for September 9.

Of course, many of us want to know about the nutritional content of these new creations. I checked with the Mc Donald’s website and could not find anything. This is interesting as they are already promoting the dish. However, there are figures around the web.

Cold Facts About Hot Dogs From the Mayo Clinic

“A typical 2-ounce, all beef frank contains 14 to 16 grams (g) of fat, between 150 and 180 calories, 25 to 40 milligrams (mg) of cholesterol, and over 500 mg of sodium, according to Robert D. Sheeler, M.D., Medical Editor of the Mayo Clinic Health Letter.

He suggests that if you must consume them as a summertime treat, don’t overdo it and consider a hot dog that is:

Fat-free or has less than 2 g of fat — Made of beef, turkey or a mixture of meats, these can deliver a decent-tasting hot dog for 50 calories or less. They have little or no fat and 10 to 15 mg of cholesterol. Still, they typically have well over 400 mg of sodium.

Reduced fat — Made of beef, chicken or turkey, these contain between 7 and 10 g of fat, about 100 to 120 calories, 25 to 55 mg of cholesterol, and typically over 400 mg of sodium. Their taste isn’t necessarily better than that of very low-fat hot dogs. All-poultry hot dogs allow you to avoid red meat, which has been linked to colon cancer when eaten in large quantities.

Meatless — These typically are soy based with between 0 and 6 g of fat, no cholesterol, and 200 to 400 mg of sodium. Taste is subjective, but condiments may be needed to liven up their flavor.

Dr. Sheeler recommends boiling or microwaving your hot dogs as “grilling can cause charring and other changes that have been linked to cancer.”

How to Make a Lunch Salad Fill You Up

As a retired guy, I am usually home at lunch and have no problems getting heatlhy foods into me, but I know that a lot of you are still out in the workforce and have limited lunchtime resources especially when it comes to healthy reasonable calorie foods.

Here is a suggestion I ran across on the web somewhere that made a lot of sense to me. It may help you the next time you find yourself at the salad bar.

First of all, many folks who choose a salad bar for lunch try to limit their calories by using little or no salad dressing. The problem with this is that the greens alone are not enough to keep your blood sugar up for the rest of the afternoon. You haven’t helped yourself if you are starving by mid afternoon and having food fantasies instead of being able to concentrate on your work.

If you use some light salad dressing you can add fat, and yes, calories, but the fat is a source of energy that can help to get you through the afternoon. Also, put some protein on that salad, too. Does the salad bar offer chicken, eggs or fish? You can add some very important protein that will benefit you throughout the day as well keep you away from the vending machine in the afternoon.

With these simple additions you can make a visit to the salad bar a success instead of a source of frustration.

What are the Best and Worst Breakfasts at McDonald’s? – WebMD

I have written numerous blog posts on McDonald’s entrees objecting to the amount of sugar, fat and salt included. You can read some of them in the Fast Food Nutritional Info link at the top of this page.

WebMD offered its version which I thought you would like to check out.

McDonald’s worst choice, according to WebMD is “McDonald’s Big Breakfast with Hot Cakes. It’ll weigh you down with 1,090 calories, 56 g fat, and 19 g saturated fat — close to the daily limit for this unhealthy fat. Even the biscuit is loaded with saturated fat, topping even the sausage patty or eggs. The sodium hits 2,150 mg, nearly the daily limit.”

Just to expand on this analysis, 1090 calories amounts to half the calories a 150 pound man requires in an entire day. So, plan on a light lunch and dinner if you have this for breakfast.

Also, the 2150 mg of sodium is near the daily limit for most people. If you are over 50 or have any kind of blood pressure problem experts say you shouldn’t have more than 1500 mg of sodium.

On the positive side, WebMD suggests: “The Egg McMuffin is a better choice under the golden arches at 300 calories, 12 g fat, 5 g saturated fat, and 2 g fiber. Lean Canadian bacon offers protein and a meaty taste with very little fat. In any restaurant, ask for the nutrition information. Items with some fiber and protein will keep you satisfied for hours.  Sodium watchers take note: the Egg McMuffin has 820 mg.”

Chicken, Ground Beef Top List of Riskiest Meats – CSPI

WASHINGTON–Ground beef and chicken are by far the riskiest meat and poultry products in the American food supply and pose the greatest likelihood of hospitalization, according to a new report by the Center for Science in the Public Interest.  Furthermore, according to the nonprofit group’s analysis of more than 33,000 cases of food borne illness connected to products regulated by the U.S. Department of Agriculture, chicken nuggets, ham, and sausage pose the lowest risk of food borne illness.

The report, Risky Meat: A Field Guide to Meat & Poultry Safety, ranks 12 categories of meat and poultry based on outbreak reports and the likelihood of hospitalizations associated with the pathogens most commonly reported in those foods.  Ground beef and chicken are not only responsible for the largest numbers of outbreaks and cases of illnesses, but those illnesses tend to be more severe.  The deadly bacterium E. coli O157:H7, for instance, was responsible for 100 outbreaks associated with ground beef in the 12-year study period.  Because that pathogen is estimated to result in hospitalization in nearly half of those infected, ground beef had the highest severity index of the 12 meat and poultry categories.  Ground beef is also connected to illnesses caused by Clostridium perfringens and Salmonella.

“Outbreaks from ground beef and chicken are reported frequently, and all too often cause debilitating illnesses—illnesses that lead to hospitalization,” said CSPI food safety director Caroline Smith DeWaal.  “For example, approximately a quarter of those who are sickened by Salmonella will go to the hospital.  The hospitalization rate for E. coli infections is nearly 50 percent and for Listeria infections it is more than 90 percent. ”

Hospitalizations caused by Salmonella put chicken in the “highest risk” category alongside ground beef.  Clostridium perfringens and Norovirus also cause outbreaks associated with chicken.  Campylobacter bacteria are also believed to cause a large number of individual illnesses associated with chicken but rarely cause outbreaks.

“Meat and poultry producers must bear primary responsibility for keeping pathogens out of their products, but when it comes to beef, chicken, and other raw meats, restaurateurs and home cooks must treat them like hazardous materials and  take steps to minimize risk,” said CSPI senior food safety attorney Sarah Klein.  “Care should be taken to avoid spreading germs from the meat around the kitchen, and meat thermometers should be used to ensure that ground beef, chicken, and other meats are fully cooked.”

WebMD is offering another of its very informative quizzes. This time on the subject of belly fat and what are the best and worst foods for promoting it.

You can take the quiz if you have the time and the inclination. There are 14 questions. I recommend that you do because it covers a broad spectrum of info on this important subject.

How Many Calories in Boston Market’s New Ribs?

Boston Market has introduced a new meal this week in the form of BBQ Ribs. The firm considers it a natural progression in the form of a ‘comfort food’ that goes with their chicken. Lots of firms offer chicken and ribs. However, Boston Market does not have fryers in their restaurants and I think most chicken and rib joints sell fried chicken along with ribs. Boston Market has specialized in the healthier oven-cooked chicken. I wonder if there may be more of a gap between the ribs and chicken than they envision.

I confess that I have a soft spot for Boston Market, having enjoyed a lot of tasty and pretty healthy meals there. When I took care of my aunt with Alzheimer’s I would pick up a turkey dinner from Boston Market for us to dine on at Thanksgiving.

The firm also boasts about 100 combinations of meals ‘under 500 calories,’ so it is possible to eat there reasonably.

Now comes the BBQ ribs. Not so healthy. Boston Market offers a half rack and a quarter rack.

Here is the nutritional breakdown for the half rack from their website:

The half rack has
Calories 1180
Total Fat 74 Grams
Saturated Fat 29 Grams
Cholesterol 215 mg
Carbohydrates 67 Grams
Sodium 3150 mg
Sugar 58 Grams
Fiber 2 Grams
Protein 65 grams

The calories come to around half of a normal person’s plus 2000 calories per day budget. Not horrible, but you will need to watch your consumption the rest of the day.

That is a lot of fat and saturated fat. More than you need and more than recommended for a day’s consumption.

Sodium is another problem. The daily recommendation is around 2300 mg, but if you are over 50 it drops to 1500, so this is double.

The sugar at 58 grams falls just short of 12 teaspoons full. There are 4.2 grams of sugar per teaspoon.

You will be getting pretty much your entire protein allowance with the 65 grams. Might be a digestion problem, but it is all the protein the average adult needs in one day.

Keep in mind that this calorie breakdown does not include any side orders of mashed potatoes and gravy or corn bread or a beverage, so you will likely be consuming at least half of the normal man’s 2000-2200 calorie per day budget by the time you finish.
