Back in July I wrote up a favorable item on Weight Watchers Slow Roasted Turkey Breast. I just had another one for dinner tonight. It was equally satisfying. In addition, I noticed a fair amount of gravy left when i was finished. Hmmmm, seemed a shame to waste it because it really tasted great. What to do? Well, one of Mr. Lazy Cook’s tenets is to get as much done with as little effort as possible. One of my techniques is to cook up a whole pound of pasta and then eat it throughout the week simply nuking the meal each time.
Clearly, the pasta was not the solution this time. I also cook up about a cup of brown rice. See my item from April on brown rice. Anyway, for this meal stretcher, I took a half cup of the cooked up brown rice and stirred it into the gravy. Bingo, one minute in the microwave and we have a lovely rice course with our turkey breast.
One half cup of brown ice adds 109 calories, 0.8 grams of fat 0.2 grams of saturated fat, no cholesterol, 1 mg of Sodium, 22.9 grams of carbohydrate, 1.8 grams of fiber and 2.3 grams of protein.
The Weight Watchers turkey breast meal was only 200 calories to begin with. Another of the good things about this meal is the portion size. You can get the complete breakdown from my initial item on it.
